Easy Drinking: Highballs Past, Present, and Future
We love cocktails of all shapes and sizes, from Tiki to Tipple. There’s a time and place for every kind of cocktail. Complex builds can lead to some really fantastic drinks, but lately we’ve found ourselves drawn to simpler builds, specifically the Highball.
Historically, the name ‘Highball’ denotes a family of mixed alcoholic drinks composed of a full-strength base spirit and a non-alcoholic mixer. Think your classic Scotch & Soda or Gin & Tonic.
Two ingredients, over ice, with a garnish. Simple right? Dig a little deeper and you’ll realize the combinations are endless. Highballs are the liquid equivalent of a Choose Your Own Adventure Book. It can be a lot fun to mix and match your base, lengthener and garnish until you find your perfect pairing. You’re only limited by your imagination.
One of our current favorites is the C & T, or Celery Root & Tonic. We strongly recommend using a high quality tonic in this drink. Top Note Tonic in particular is bright and crisp with just the right amount of bitterness and it pleasantly accentuates the savory and vegetal notes of the Apologue Celery Root. Garnished with a sprig of rosemary, the C & T is equal parts herbaceous and refreshing. -RH
